In Waipara, early frosts and challenging flowering reduced yields. Midsummer delivered the region’s hottest day since 2021, reaching 36.9°C, while overall temperatures sat near average. With early autumn conditions on its side, Riesling enjoyed extra hang time to slowly build flavour and concentration.\u003c\/p\u003e\n\u003cp class=\"ewa-rteLine\"\u003eIn the winery, we ferment in stainless steel at mostly cool temperatures, using a selection of yeasts to bring out the best of each parcel. We taste daily and stop the ferment when the balance is just right, keeping a touch of natural sugar.
