In Sauvignon Blanc, UV exposure supports the formation of thiols, the compounds responsible for the gooseberry, passionfruit and citrus notes that define Marlborough. In Pinot Noir, it enhances anthocyanin development, often contributing to the vivid purple hue seen in young wines.
