Marlborough & Waipara

Winemaking

We use a selection of different yeasts to amplify the regional characteristics of the Marlborough portion of the blend.

Our winemakers tasted each parcel daily and stopped the ferment when the wine was balanced and showed aromas of spice & exotic tropical notes.

Stopping the ferment early retains natural sugar which creates the beautiful off-dry element of this wine. It's kept on light lees until bottling to ensure flavour intensity.

This Riesling is lighter in alcohol at 10% alc/vol.
